Ingredients

  • 2 tablespoon of coconut oil/olive oil
  • 1 (10 ounces) zucchinis, cubed chopped
  • 1 onion chopped
  • ½ (12 ounces) bag fresh broccoli florets
  • 1 small bunch of kale stemmed and chopped
  • 4 cups low sodium veggie broth
  • 2 cup filtered water
  • 1 head of garlic peeled and roughly chopped
  • 1 teaspoon grated ginger
  • 1/2 bunch parsley
  • 1/2 bunch cilantro
  • Kosher salt to taste

Method:

Step 1 – Heat the coconut or olive oil in a large pot over a medium flame. Add the chopped onions and sprinkle a pinch of salt. Cook until the onion is translucent and becomes fragrant for 5mins.

Step 2 – Add in zucchini, broccoli, kale, veggie broth, and water. Mix well to combine and make sure that enough liquid comes out approx.1 inch over the veggies. Let the stuff boil and then reduce the flame to low heat and cook it further for ten minutes until the broccoli is soft.

Step 3 – Turn off the heat and toss in the garlic and ginger. Pop on a lid and let the soup sit until it is cool enough to handle.

Step 4 – Add the soup to a blender and a small handful of the parsley, cilantro, and a pinch of salt. Blend until it is creamy. Transfer the soup into a storage container.
